One Pan Chicken Scampi Recipe

When you hear the word scampi do you automatically think of shrimp scampi? For those who would like a yummy change and/or can’t eat seafood this chicken scampi is a delicious twist on this classic pasta dish. It’s all about the chicken, sauce and pasta and if you like more chicken or vegetables in your meal you can easily add more and use what veggies you have in the fridge!

It may be a super simple chicken and pasta recipe but it’s packed with rich and decadent flavours complemented by the wine and fresh herb toppings. I also love garlic and tend to use more but you can reduce or add more garlic depending on your preferences. Our recipe has a middle ground for the garlic if you will. It’s a filling and satisfying dish, wear loose pants, just saying.

As you can see in the photo above, bite size pieces of chicken breast are seared in my hot cast-iron pan with the butter until the chicken is a nice golden brown. Then will come the garlic, pepper flakes, Italian seasoning and white wine. It’s really a hardy dish thanks to the pasta and so full of flavour that you might just be craving it after you try it for the first time. chicken scampi

What kind of pasta do you use for chicken scampi?

We used linguini for this recipe but you can easily use spaghetti or my personal favourite angel hair pasta. The latter is usually the one I love to use most but I did linguini this time as it’s a little too easy to overcook angel hair pasta.

Chicken Scampi Recipe

This chicken scampi is a delicious twist on a classic pasta dish. It's all about the chicken, sauce and pasta giving you a scrumptious meal.

Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes

Ingredients

  • 2 large chicken breasts
  • 3 cups of white wine (or chicken stock if you can’t do wine).
  • 1-1.5 cups of cherry or grape tomatoes
  • ½-3/4 cup of grated parmesan cheese
  • ½ cup of butter
  • Fresh basil (small bunch)
  • Fresh parsley (small bunch)
  • Juice of 1 lemon
  • 1 tsp Italian seasoning
  • 1-2 tsp garlic (I like garlic so I personally do 3-4 tsp )
  • Pinch of red pepper flakes
  • 12 oz of linguini (small fistful)
  • 1 small onion diced

Instructions

  1. Chop chicken into cubes.
  2. Melt butter in a heavy skillet and sauté chicken until cooked. Stir in garlic, pepper flakes, Italian seasoning.
  3. Sauté diced onions with the spices.
  4. Pour in the white wine (or stock) and add pasta. Cook on medium heat until the pasta is soft.
  5. Stir in halved tomatoes, parmesan cheese, and chopped basil & parsley.
  6. Serve with a squeeze of fresh lemon.

Notes

You can use chicken stock instead of wine.

You can add other veggies if you prefer.

As mentioned we like more garlic but we've put in a measurement for a median of garlic. Add more or less depending on your preference.

You can substitute the linguini for spaghetti or angel hair pasta. We love it with Angel Hair pasta but it cooks a lot quicker so keep an eye on it if using angel hair.

Doesn’t that look like it’s easy to make the chicken scampi? It really is quite easy! Here are a few substitutions that you can make as well. 

Italian Seasoning. Don’t have it on hand? You can make your own blend with the spices below. Keep in mind that you will not use this entire mix for this recipe.

  • 2 tablespoons dried basil
  • 2 tablespoons dried oregano
  • 1 tablespoons dried rosemary
  • 2 tablespoons dried parsley
  • 1 tablespoon dried thyme
  • 1 teaspoon garlic powder

What other cuts of chicken can be used?

You can use boneless skinless chicken thighs instead of the chicken breasts. They will have a different texture and you may need to cook them a little longer.

White wine: I tend to use whatever I have on hand but it’s always a good quality white wine. A decent white wine doesn’t have to be expensive. As mentioned you can also use chicken stock. Low sodium chicken stock could be used but it won’t have quite as much flavour.

  1. Chicken Pot Pie, our family loves it.
    I make extra portions of Chicken Pot Pie with a layer of unbaked pie crust on top to freeze. After thawing and baking, the top is flaky and delicious.

  2. The Chicken and Chickpea Bowl at chicken.ca looks great! As for stuff I’ve actually made, I really like simple, lightly seasoned baked chicken with tons of veggies.

  3. My favorite chicken recipe is called ‘Super Easy chicken.’ It’s chicken breast or tenders, a pack of dry Italian dressing, and a cup of warm water. Put all in a crock pot for 7-8 hours. It is the best!! My boyfriend and I love this one!

  4. Oooh, I LOVE shrimp scampi and don’t know why I never thought to try Chicken Scampi for a change – I think I’m going to love this!! My favourite chicken recipe is BBQ chicken breasts – my dad makes the best ever, using very simple, classic ingredients. It’s my favourite meal, I request it for my birthday every summer.

  5. My favourite chicken recipe is my most recent creation: I used ground chicken instead of beef (and cauliflower rice instead of regular rice) for a lazy cabbage (roll) casserole–and it is delicious! I may prefer it to the beef one.

  6. It’s hard to pick ONE chicken recipe as a favourite; the ingredient is prevalent in my home. But I have to say that Khow Suey with Chicken (Noodles in a Coconut Curry Sauce) is one of my favourite.

  7. I favorite chicken recipe would be my Dad’s recipe, He would mix flour and his spice mix, coat the chicken pieces and then fry them to get the skin crispy and then bake in the oven. We would have this with mashed potatoes and gravy.

  8. My granddaughter’s favourite is Nana’s breaded chicken. Our family’s fave is a chicken, bacon and cheese dish that is always asked for. So many ways of preparing chicken, the possibilities are endless.

  9. Wow love this recipe! The heirloom tomatoes make so vibrant! I have so many favourite chicken dishes from chicken breast on a toasted bun to curry coconut chicken soup and everything in between. Canadian Chicken is my meat of choice! Good luck and stay safe beautiful people ????
