Thai Peanut Chicken Salad Recipe
This Thai Peanut Chicken Salad has everything you need in a meal from the crisp cabbage, carrots, bell pepper, shredded chicken breast and topped with a peanut sauce make it a delicious and filling meal. We’re also sharing another tasty option where you coat the chicken in the peanut sauce and finish with our flavourful sesame dressing.
Peanut Sauce or Sesame Dressing?
Or both! While the photos we’re sharing in this recipe only show the peanut sauce we also love this Thai Peanut Chicken Salad with a sesame dressing. However, when I made this recipe the first time I only used the peanut sauce because I have a picky eater, my daughter.
I seriously can’t emphasize how picky she is, yes she’s gotten better as she’s gotten older but it’s still challenging. She’s also not a salad lover, heaven forbid this teen should eat lettuce, I know! She doesn’t even have lettuce on her burgers or tomatoes or the list could go on but I won’t.
Know one thing my daughter does love? Peanut butter! Even then though it depends on what it’s mixed with so I decided not to completely coat the chicken in peanut sauce but rather finish the salad with it so that everyone could add the amount of sauce that they want.
Did it work? Yes, she does like the sauce hurray, she also liked it on the chicken and while the cabbage wasn’t her favourite, she said it was better than lettuce. She didn’t eat all of the cabbage but still take that as a win.
So the next time I made this yummy and oh so filling Thai Peanut Chicken Salad, I dumped the chicken in the peanut sauce and completely coated the chicken and then we mixed it in with the cabbage and carrots. We finished it with our sesame dressing that we’ve used in our Crunchy Asian Salad which is one of my favourite meals.
So there you go two options use only the peanut sauce to finish this tasty Thai Peanut Chicken Salad or finish it with a sesame dressing.
Alternative Toppings
I love the crunchiness of the peanuts to this salad and if you wanted more crunch goodness you could also add slivered almonds and/or crispy wonton strips. In addition you can add more vegetables from snap peas to well whatever your heart desires.

Thai Peanut Chicken Salad
This delicious Thai Peanut Chicken Salad has everything you need in a meal from the crisp cabbage, veggies, chicken and topped with a yummy peanut sauce.
Ingredients
- 2 cups of chopped green cabbage
- 2 cups of chopped red cabbage
- 1.5 cups of julienned carrots
- 1 red pepper sliced
- 2 tbsp sesame seeds
- 4 tbsp chopped peanuts
- 2 chicken breasts cooked and shredded
- Bunch of cilantro
Dressing
- ¾ cup of peanut butter
- ¼ cup of olive oil
- 1 tbsp sesame oil
- Dollop of sambal hot sauce
- 2 tbsp of high quality soy sauce
- 2-4 tbsp water (optional)
Instructions
- Shred chicken
- Prepare veggies and place in bowl, set aside the peanuts and the sesame seeds.
- Prepare dressing by blending in a blender on pulse. Depending on the type of peanut butter you use you may need water.
- Pour about ½ the dressing on top of the salad. If you want really saucy salad you can add more.
- Garnish with chicken and the sesame seeds, cilantro, and peanuts. You can add more dressing too. *see notes about sesame dressing.
Notes
As mentioned in our post you can do the following as a variation:
Put the shredded chicken in the peanut sauce (I would do this when the chicken is warm but not hot) and coat the chicken and then add it to the salad and mix in with the cabbage and other veggies. Top with our sesame dressing (optional) that you can find HERE.
The cooking time does include cooking the chicken breasts but we don't provide any instruction, cook it how you want. Leftover rotisserie chicken also works well.

Now doesn’t that look easy? I also love this Thai Peanut Chicken Salad with snow peas and I tend to add more cilantro for myself because I love cilantro, especially with the peanut sauce!
