Skillet Chicken and Vegetables – One Pot

Skillet Chicken and Vegetables – Need an easy dinner idea that’s healthy, fast and delicious? Bonus it also makes for a great low carb meal without sacrificing any flavour and it’s the perfect recipe for using up any veggies you have in the fridge.

Chicken and Vegetables Skillet

Make this colourful and oh so flavourful chicken and vegetables skillet with a Cajun spice kick for an easy dinner. Even better, since everything is cooked in one pan there’s less mess to clean up. We went with broccoli, bell peppers, green beans and zucchini for a yummy vegetable crunch to this easy chicken recipe, and combined with the Cajun spice the sauce is delicious.

An Easy One Pot Chicken and Vegetables Skillet

I love how easy it is to make this one pot chicken and vegetables skillet. Between prep and cooking everything it can be ready in about 30 minutes. Colourful, flavourful and if you need low carb it’s that too. Of course my hubby and daughter like to have it with rice and I don’t blame them it is delicious with rice. I like the spicy kick but you can easily tone down the spiciness or level it up depending on how spicy your family likes it.

What You Need for the One Pot Chicken and Vegetables Skillet

I love the spices in this recipe and it adds such a depth of flavour to the food. The spices are similar to what you may find in a Cajun spice mix so if you have that already feel free to use it instead. 

  • Olive Oil: You’ll need a couple of tablespoons of olive oil, divided, for sautéing.
  • Chicken: I used about 1 pound (450g) of boneless, skinless chicken breasts, cut into 1-inch pieces.
  • Garlic Powder, Paprika, and Onion Powder, Dried Thyme, Rosemary & Chili Powder (or use your favourite Cajun spice mix)
  • Onion: Use your favourite but I did white onions this time. I prefer less onions but hubby likes more. Slice or dice up to you.

  • Broccoli
  • Zucchini
  • Bell Peppers: You can use any colour you like. I prefer red, yellow or orange as they’re sweeter.
  • Green Beans: I added these because I had some in the fridge and wanted to use them up.
  • Chicken Broth: I prefer low sodium
  • Chopped Fresh Parsley: For garnish.
  • Red Chili Flakes (optional): Want to kick up the spiciness a notch? Add chili flakes.
  • Dutch oven or a deep skillet. For this recipe I used a large 12.5 inch Cast Iron Skillet. You don’t have to use one quite so big if you want to make less of this recipe.

There are tons of reasons and I know I say this a lot but I’ll try and share some of the reasons we love them so much that I might not have shared before or are my favourite reasons.

I believe very strongly in having high standards for the treatment of the animals. This goes hand in hand in my opinion with Canadian Chicken Farmers adhere to a strict mandatory On-Farm Food Safety Program.

Now let’s get to this recipe shall we?

Skillet Chicken and Vegetables – Need an easy dinner idea that’s healthy, fast and delicious? Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 1 lb (450g) skinless, boneless chicken breast, cut into 1-inch pieces
  • Green beans chopped in half (add to taste and for more green color)
  • 2 red bell peppers, chopped into chunks
  • 1 broccoli crown, broken into florets
  • 1 zucchini
  • 1/2 onion, sliced
  • 1/4 teaspoon salt and pepper
  • 2 tablespoons olive oil
  • ½ teaspoon of each Garlic Powder, Paprika, and Onion Powder, Dried Thyme and Rosemary
  • Chili Powder: Depending on your taste, add ¼ to ½ teaspoon of chili powder for depth of flavor.
  • 1/4 cup (60ml) low-sodium chicken broth
  • 1 tablespoon fresh chopped parsley, for garnish
  • 1/2 teaspoon red chili pepper flakes, optional

Instructions

Mix together the Garlic Powder, Paprika, and Onion Powder, Dried Thyme, Rosemary & Chili Powder.

In a large bowl add the cut-up chicken and season with salt and pepper. Add 1 tablespoon olive oil and half of the seasoning mix and toss until coated.

Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Add seasoned chicken until cooked through (5-7 minute). Chicken is cooked when the internal temp is 165 ºF.  Remove chicken and set aside.

In the same skillet, add the onions and if needed a bit of olive oil. Sauté until the onions are soft. Add all vegetables and add the remaining seasoning mixture, plus salt and pepper, and continue to cook until the vegetables are at your desired tenderness. We like them crunchy.

Add the chicken broth into the skillet and scrape any browned bits and
stir the into the broth and veggies.

Place the cooked chicken back into the skillet and combine with the
broth and vegetables. Simmer for 1-2 minutes.

Garnish with red chili pepper flakes and parsley and serve with or without rice and noodles. Enjoy.

  1. I love to make a sauce using french dressing, onion soup mix, and can of whole cranberry sauce mixed together and put over the chicken breasts. It’s easy to keep the ingredients in the pantry ready to go and then mix up when you need a quick and share-worthy meal. 🙂
