I have to admit I like these M&M Cookie Sandwiches a little more than I should, my waistline is not always as grateful about them as my tastebuds are. YOU just gave me the best ideal! My great niece almost 3 loves ice creams and cookies. BUT I have leaned that smaller is better with her with food/drink that could be messy. If I made these cookies almost like a vanilla wafer an then added the ice cream. She could eat the smaller size before they melted.
