The white chocolate as I’ve already mentioned so delicious with the pumpkin cookies. One thing I forgot to do that is adding a few of the chocolate chips on top of each cookie, more for looks and extra white chocolate yumminess. This is is not required of course but it always looks nicer on cookies and loaves.

Do you have to use white chocolate chips?

No of course you don’t, you can substitute with semisweet or dark chocolate chips. In my opinion any of the are delicious options. I’ve also thought about using toffee bits or butterscotch chocolate chips. Hmmm oh the possibilities.

Prep Cooking Tip

Blot the pumpkin puree. It has a lot of moisture in it which we don’t necessarily need. Put it in either some paper towels or a cheesecloth and gently blot some of the moisture out. You don’t want to it to be try, just take out a bit of the moisture.
