Easy Oreo Poke Cake Recipe
This Easy Oreo Poke Cake Recipe is perfect for potlucks, birthdays and really any get together. If you love cookies n’ cream, Oreos and chocolate cake then this is the dessert for you. It’s a fabulous party food choice and did we mention how delicious and easy it is to make?!
This is one delicious cake to put together for any occasion. It’s moist and flavourful chocolate cake layered with vanilla pudding and Oreo cookie crumbles and finished with a stabilized whipped cream topping and yes more Oreo cookie crumbles.

WHAT’S POKE CAKE?
Until a few years ago I hadn’t even heard of poke cakes and now I’m slightly obsessed with them. So many variations that the delicious possibilities are endless. The name does get right to the point though, poke cake because you poke holes in the cake so that whatever filling you’re using whether it’s pudding or something else sinks into the cake via the poked holes.
The cake absorbs the pudding and once the cake has been chilled the pudding thickens into the cake make it super moist and delicious. Once the cake has been chilled then you can put whatever toppings you want on the cake. For us we started with a stabilized whipped cream.
THE BEST POKE CAKE
One thing to think about for your poke cake is how deep you want to poke the holes into the cake. Do you want there to pockets of the lemon curd (or pudding) throughout the cake or do you prefer to have it so it’s more of an evenly dispersed layer throughout the cake?
If you want pockets of vanilla pudding goodness throughout the cake make the holes deeper, at least halfway down the cake. For a more evenly dispersed layer then make the holes more shallow, no more than 1/3 down the cake.

Can you use other flavours of pudding?
Of course you can but then remember that it won’t necessarily be a cookies n’ cream flavour if you do. For those of you in the U.S there’s an Oreo pudding mix which of course would be perfect for this. Sadly I have not yet seen this pudding mix in Canada. You could also make it with a vanilla cake and chocolate pudding, a reverse Oreo lol.

Easy Oreo Poke Cake Recipe

Ingredients
- 1 box chocolate cake mix + ingredients to make it
- 2 (4 oz) packages Instant Vanilla pudding
- 3 cups milk, 2% or Homo
- 2 cups of whipping cream
- 2 tbsp powdered sugar
- 1 tbsp of gelatin mixed with 2 tbsp of water
- Crushed Oreo cookies for topping
Instructions
- Preheat your oven to 350F degrees.
- Make the cake mix according to package directions and bake in a 9x13-inch pan. Bake cake according to times on the box.
- When the cake is baked, allow it to cool for 10-15 minutes, then poke holes all over cake *see our notes for depth of holes.
- In a medium-sized bowl, add milk to the pudding mixture and whisk until it’s as smooth as possible.
- Pour the pudding mixture over cake making sure to pour down the holes wherever possible.
- Spread out the pudding with a spoon and gently push down on the pudding to help it seep into the holes.
- Place the cake in the fridge to allow it to cool completely. Approximately 1 hour.
- In a microwave safe bowl mix the gelatin and water and let bloom for 2 minutes.
- Transfer the gelatin mixture to the microwave and microwave until the gelatin is fully dissolved, it will only take a few seconds. Stir the mixture, then set aside to cool.
- In the bowl of your stand mixer (you can also use a hand mixer) with the whisk attachment, combine the whipping cream & powdered sugar. Whip the mixture until it starts to thicken and soft peaks form. Put the mixer on low speed and slowly pour in the gelatin mixture until well combined. Increase to medium speed and continue mixing until stiff peaks form.
- Scoop the stabilized whipped cream onto the cake and spread it to completely cover the surface of the cake and let it set for 2-4 hours
- Once it is set, top with crushed Oreo cookies. Slice then serve.
Notes
* You can use Oreo instant pudding if you can find it instead of vanilla.
