Chicken and Eggs Breakfast Skillet Recipe
Skillet meals are a great and delicious way to cook a meal with less clean-up like this delicious chicken breakfast skillet recipe. I love that we get to enjoy the added protein of chicken which I admit I don’t usually think to cook for breakfast until now!
I used the recipe from Chicken Farmers of Canada and I added red bell peppers to the recipe to get some veggies in the breakfast skillet.
What vegetables can I use for the skillet breakfast recipe?
You could add whatever veggies you like in your breakfast skillet like bell peppers, spinach, mushrooms and the list goes on. Keep in mind though that for some veggies that take longer to cook like mushrooms you may need to sauté them in the pan first with the oil before the chicken, sausage and bacon and take them out and add back in once the meat is cooked.
Easy Cast Iron skillet breakfast Recipes
This is an easy breakfast skillet recipe which is tasty and filling, a great way to start your day. We like the chicken breasts in this recipe as it pairs nicely with the sausage and bacon which as you can imagine have more fat than the chicken. You can of course use chicken thighs but I find it a better balance with chicken breasts and less fatty and greasy since both the sausage and bacon have plenty of fat already.
I am not a big breakfast person but I do like a good brunch as I like to eat later in the morning or early afternoon. However, whether you’re a breakfast person or more of a brunch/lunch person like myself this chicken breakfast skillet recipe is a great first meal of the day!
I do like cast iron skillet breakfast recipes like this chicken one as it makes cooking easy, hello one one pan only to clean afterwards. My husband likes to have proteins with his breakfast so between the chicken and sausage he’s a happy camper and I like my eggs and veggies with my protein so once again this recipe does the job and more.

How to make a chicken breakfast skillet
- Heat a non-stick skillet over medium-high heat. Add the olive oil and let it preheat.
- Add the sausage, chicken and bacon to the skillet. Stir until all the meat has browned slightly and is no longer raw.
- Add chopped bell pepper and cook until they start to get soft
- Crack the eggs in the skillet making sure to break the yolks slightly with a spatula. Cover and cook until the whites are fully cooked.

Chicken and Eggs Breakfast Skillet Recipe

Ingredients
- 1 tbsp extra virgin olive oil
- ½ cup Italian sausage, sliced
- ½ chicken breast(s), sliced
- 2slices bacon, cut crosswise into ½ inch pieces
- ½ cup chopped red bell pepper
- 4egg(s), large
- chives, fresh, chopped
- salt
- pepper
Instructions
Heat a 6-8 inch non-stick skillet over medium-high heat. Add the
olive oil and let it preheat.
Add the sausage, chicken and bacon to the skillet. Stir until all
the meat has browned slightly and is no longer raw, about 8 minutes.
Add chopped bell pepper and cook until they start to get soft
Crack the four eggs in the skillet making sure to break the yolks
slightly with a spatula. Cover and cook until the whites are fully cooked, about 12 minutes.
Season with salt and pepper and sprinkle with freshly chopped
chives. Remove from the skillet and slice into wedges. Serve immediately.

This is one filling meal and full of protein, flavour and some veggies, it’s bound to keep you full for at least a few hours. I felt full for several hours after I had this for brunch but it was not a heavy meal.
