Easy No-Knead Skillet Bread with Cheese & Herbs

Now they’re asking for it almost every week, scratch that every day! It’s that easy to make and you can switch it up from sweet to savoury or however you want!
If you haven’t baked much with yeast or at all I know it can seem a bit intimidating at first, I’ve been there but now that I’ve baked with yeast several times there’s no going back. Oh so many yummy things to be made from cinnamon rolls to delicious breads like our herb and cheese skillet bread.

Yep that’s really all you need to make a mouth-watering loaf of this skillet bread, 6 ingredients. You can use whatever herbs and additions you like. If you have fresh herbs those are always amazing to add. I grow rosemary for example and love to use it in my recipes. Here are some of my favourites that I like to use:
- Rosemary (shocker I know)
- Olives
- Nuts
- Roasted Garlic
- Onion (I would personally use onion flakes)
- Different cheeses
For this particular skillet bread recipe I kept it very simple this time and just used a Clubhouse Garlic and Herb mix. I’ve since made it a few more times and garlic and rosemary is my personal favourite and the family seems to love it too.
Yeast Tip
When using yeast, warm temperatures are best but not HOT. The water should be warm about 110F and definitely not hot as hot temperatures can kill the yeast. If the yeast doesn’t bubble, foam or react I’m sorry to tell you that you’ve killed it.
Once your dough is all mixed you will let it rest in the bowl so it will rise for about 50-60 minutes. It should double in size. That’s the toughest part in my opinion is waiting for the dough to rise as I’m impatient as I want to bake and then eat this bread while it’s nice and warm with some butter melting on it. Oh my, freshly baked bread with butter is my weakness big time!
This recipe is very easy and forgiving, don’t worry if you make a mistake, as mentioned earlier the most important thing in my opinion is making sure your water is not too hot so you don’t kill the yeast. That’s main thing that can make this cast iron skill bread recipe a flop.

Skillet Bread Recipe
Enjoy this yummy but simple no-knead skillet bread with cheese and herbs. You can easily change it from savory to sweet.
Ingredients
- 1.5 tbsp instant yeast
- 2 cups of warm water
- 1 tbsp honey
- 1 tbsp herb seasoning (add more if you like a bolder herb profile this is milder)
- 1/3 cup of shredded cheese
- 3.5-4 cups of white flour
Instructions
Place yeast and warm water in a bowl to let is sit for 5 minutes.
Add in remaining ingredients, starting with 3.5 cups of flour and mix with hands for 3-4 minutes. You want dough to be just slightly sticky but not very sticky. Add in flour as needed. I find that you can just mix the cheese in with all the dry ingredients and it mixes up just fine. This bread recipe is very forgiving.
Place in the bowl covered for 45-60 minutes in a warm spot until doubled in size.
Pat down dough and place in oven safe baking dish and bake at 350 for 30-40 minutes or until golden brown on top. A toothpick should come out clean as well and the top should feel firm. I made mine in a 9-inch cast-iron skillet and it baked up in about 35 minutes
Let cool before cutting.
Notes
You can of course skip the cheese if you prefer without cheese.
If you'd like a sweet bread then skip the cheese and garlic herbs etc.. and you can use a bit of cinnamon, brush honey on top of the loaf about 5 minutes before you want to take it out of the oven.
You could also add chocolate chips. I personally like this bread savory but I know some people who have sweetened it.
